I watched The Chiappas make homemade gelato and it looked so easy, I had to give it a try! No ice-cream machine needed!! I obviously needed to adapt her recipe to suit me, so I switched the double cream mainly because you can’t buy it here and normal cream would mean spending a fortune and going to the shops. I used coconut cream before as a substitute for cream and it worked perfectly in my Banoffee tart and it worked again, perfectly!

Banana ice-cream is my new favourite guilty pleasure. Mainly because it isn’t a guilty pleasure at all, until you add caramel. It is delicious on its own, but this twist makes it even more delicious!
Coconut palm sugar has been on my ‘creative’ list lately and one thing i’ve been wanting to make for a long time is caramel. I wasn’t sure what to expect when using coconut palm sugar to make caramel, but the colour was a surprise and the flavour – oh I love caramel, but THIS is like a butterscotch caramel. I based the recipe on Sally’s Baking Addiction salted caramel recipe but I didn’t have cream, so I used milk instead which makes this the perfect anytime recipe as it doesn’t need special ingredients. Oh and of course my Bali twist – coconut palm sugar.
I burnt my sugar when making this delight, if this happens to you, don’t stress, it isn’t ruined! Add some golden syrup until the burnt flavour subsides. This is delicious swirled through ice-cream. Continue reading
